This arugula, mint and watermelon salad is so delicious! Like really delicious haha! It’s worth trying it! It’s very light and refreshing, but it can make a delicious appetizer or light lunch, or can even be eaten as a healthy afternoon snack! The watermelon pairs very well with the arugula and the mint, the flavors are well-balanced, and the freshly grounded sea salt brings a really nice touch, so make sure you don’t omit the salt.
I normally don’t combine fruits and veggies together – for digestive reasons, but I wanted to try something a little different since I had a watermelon that I wanted to open and a lot of fresh mint in the fridge. That was a really great combo, I really recommend trying it!:)
I’ve also added some avocado and pine nuts, which was really delicious. If you don’t have pine nuts, you could substitute with sunflower seeds or walnuts perhaps.

- 4 cups baby arugula
- ½ cup fresh mint leaves
- 1½ cup watermelon
- 1 diced avocado
- 1-2 tbsp pine nuts
- 1-2 tbsp extra-virgin olive oil
- 1 lime, juice
- Freshly ground sea salt (I use pink Himalayan sea salt)
- In a large bowl, put all ingredients together. Add olive oil, lime juice and salt, toss and serve.
