This black bean and corn salad is truly delicious, especially with the fresh corn, the diced avocado, and the delicious dressing. It’s a light, refreshing, and nutritious salad that is perfect for summer. It’s vegan, and gluten-free.
I used organic canned black beans as I’m in vacation and it’s more convenient but feel free to cook your own if you like. If you buy canned beans, it’s important to get organic to avoid BPA and other toxins. I like the brand Eden – they really have great products. Beans are a great source of proteins and fiber, as well as iron and magnesium. If you have trouble digesting beans, make sure you rinse the beans very well if using canned beans (if cooking your own, you may want to add a piece of kombu to the water while cooking), you also want to chew the beans very well, and eating smaller quantities will help.
I don’t really eat corn as I try to avoid grains (don’t forget that corn is not a vegetable but a grain), but once in a while, when corn is in season, I’ll eat a little bit. I don’t buy canned corn; I always use fresh. The corn in the salad isn’t cooked. It really pairs well with the black beans and the other ingredients, and bring some sweetness to the salad.
I used red bell pepper in the salad instead of tomatoes, as bell peppers are an excellent source of vitamin C, and brings a nice texture to the salad. Tomatoes are not for everyone due to their acidity but if you have a tomato that you want to use at home, feel free to use it to replace the bell pepper.

- 1 (14.5 oz) can organic black beans, drained and rinsed
- 2 ears fresh corn
- ½ red onion, diced
- 1 red bell pepper, diced
- ¼ cup finely chopped cilantro
- 1 avocado, diced
- ¼ cup extra-virgin olive oil
- ¼ cup lime juice
- 1 tsp cumin
- 1 tsp sea salt
- ¼ tsp black pepper
- Make the dressing: In a small blender, or bowl, mix all ingredients together and mix until smooth.
- In a large bowl, combine the ingredients to make the salad. Add the dressing and toss. Serve immediately or store in the refrigerator until ready.
