Chia seeds are one of the food I eat almost everyday. They are so amazing! They are alkaline forming, they are full of fibers, proteins and minerals such as calcium and magnesium. They are easily absorbed and contrary to flax seeds, they don’t need to be grounded to absorb the nutrients. You can add them to smoothies, muffins, you can replace eggs in baking with them, and you can also make one of my favorite breakfast… CHIA PUDDING!! These little seeds are so versatile. I’m always excited in the morning to eat breakfast haha. It’s my favorite meal of the day and I just loooove chia puddings. Besides smoothies, green smoothies and acai bowls, they are my favorite breakfast!
This apple cinnamon pudding is made with fresh coconut milk. I used the water and the flesh of a young coconut and blend it together with a pinch of vanilla bean and sea salt. The result is a thick, creamy, yummy and super nutritious coconut milk. It’s a wonderful source of fats and we so need them in our diet. You can also make coconut milk at home by using coconut flakes. I do it often and the result is always very yummy. Otherwise, simply use refrigerated coconut milk from the store, but get the unsweetened version.
The chia seeds mixed with the coconut milk and warm spices truly make a delicious breakfast. Your child should enjoy it too. Apple cinnamon is always a popular combination of flavours for children. Because apples are very watery, this chia pudding (contrary to others) is best to be made right prior eating it.
This chia pudding is raw, vegan, gluten and soy-free. Hope you enjoy it!!
- 2 tbsp chia seeds
- ⅔ cup coconut milk
- ½ apple, peeled and shredded
- 2 tbsp coconut flakes
- 1 tbsp pure maple syrup
- ¼ tsp cinnamon
- Pinch nutmeg
- Pinch vanilla bean
- Pinch ginger, optional
- Coconut milk:
- 1 young coconut (water & flesh)
- Pinch vanilla bean
- Pinch sea salt
- Make the coconut milk if needed: Blend all ingredients together until nice and smooth. Add a little water if needed to achieve a milky consistency.
- In a small bowl, combine chia seeds with coconut milk. Stir and let sit for a few minutes until you get a pudding consistency.
- Add the remaining ingredients, mix until well combined and serve.
