It’s so hot here in South Florida, and even though summer is already “over” and school has already started, I decided to make myself a healthy treat, and made a vegan fig lavender ice-cream. Oh my.. Yumminess alert haha!! It was sooo good. A banana ice cream is similar to eating an ice cream, because it’s so creamy and cold, but it’s so much healthier of course. It’s only made with real, wholesome foods. No dairy, added sugars, additives or preservatives, GMO’s, and so on. And it’s all organic. Yum!
I don’t know if you ever made one but if you haven’t, please don’t be intimidated. It is SO easy to make. You only need a high-speed blender, such as vitamix or a blendtec, or a good food processor. You simply blend all ingredients together until smooth, that’s it. You will have a super yummy and healthy snack or dessert in less than two minutes. It’s important to make sure your bananas are frozen. Don’t use fresh bananas and ice. Peel your bananas, cut them in pieces, and store them in the freezer and use them only once they are completely frozen.
I love fresh figs and I had some at home so I got inspired by them and chose to use them to make my nana ice-cream. I have a lot of different essential oils at home so using lavender essential oil just came in my mind. And figs and lavender pair so well together. I use DoTerra essential oils but you can use Young Living if you prefer or whatever you have at home that is quality and edible. Lavender is one of my favorite essential oils; it’s a very relaxing oil, and can be used internally or topically for different purposes.
After blending this beautiful combination of flavors, you will get a lovely, romantic pastel color. Garnish with half a fig, and enjoy immediately or it will melt very soon!!! This banana ice cream is very comforting and satisfying. You will feel a little more relaxed after eating it 😉
Hope you try it and enjoy it!!
- 4 frozen bananas
- 6 fresh figs + 1 to garnish
- 4 tbsp almond milk, preferably homemade (or use unsweetened)
- 1 drop essential lavender oil (or 2 if you really like lavender)
- ½ tsp pure vanilla extract
- Pinch Himalayan sea salt
- Using a high-speed blender or a food processor, combine all ingredients together and blend until smooth and creamy. You will need to stop a few times and use something such as a temper (part of the vitamix) to help to blend.
- Pour into a glass, garnish with a fig, and eat immediately or it will melt very soon!
If you like it sweeter, feel free to add a tablespoon of raw honey
