If you feel like having a healthy, delicious, creamy and refreshing dessert, try this mango lucuma cream. This dessert is almost like eating ice cream. It’s basically a blend of mangoes, banana, and superfood lucuma. I added a little coconut oil as its an amazing superfood with plenty of health benefits, and it’s also a nice touch to add in this exotic dessert.
Lucuma is a fruit native to Peru. It’s considered to be a superfood. It’s normally sold in form of powder at your health food store or online. Not only it provides B vitamins and other vitamins and minerals, but it also acts as a natural sweetener. It has a low glycemic index and doesn’t spike blood sugar levels. It has a delicious flavor and is really good in smoothies and desserts.
I made this delicious dessert in my vitamix but you may also use a food processor. If you have trouble blending for some reason, just add a little bit of almond milk.
This mango lucuma cream makes a perfect snack for kids as well. It’s so soft and creamy, and it almost feels like eating ice cream, but without dairy and sugar! This delicious mango lucuma cream is vegan, gluten, soy and sugar-free!
- 2 frozen bananas
- 2 ripe mangoes
- 2 tbsp lucuma powder
- 1-2 tsp coconut oil
- Pinch fine sea salt
- In a high-speed blender or in a food processor, put all ingredients together and blend until nice and smooth.
- If you add coconut oil, you may want to add it while it's blending or processing.
- Enjoy immediately!
