This papaya avocado salad is amazing. Seriously. I normally don’t mix fruits with veggies but this one is an exception. It was hot outside and wanted to try something different. It really turned out amazing. And the dressing was seriously delicious.
Did you know that the papaya seeds are edible? When blended with other ingredients, they can make a lovely dressing or sauce. The seeds are slightly spicy so it really gives a nice taste to the dressing or sauce. Papaya is an excellent source of vitamin A, C and fibers, as well as containing papain, an enzyme that aids to digest proteins.
To make the dressing, use a small blender such as a magic bullet. It will be more handy than using your regular blender. Feel free to double it too!
This salad is very refreshing and delicious. If you have papaya at home or if you have access to fresh papaya, I highly recommend trying it! I’m sure you’ll love it.
- Organic mixed greens
- 1 avocado, diced
- 1 organic tomato, diced
- 1 small papaya, seeded and diced
- ¼ cup cilantro, chopped
- Few slices of red onion
- Papaya seed dressing
- ¼ cup extra-virgin olive oil
- 2 Tbsp lime juice
- 2 Tbsp papaya seeds
- 1 tsp raw honey
- ¼ tsp sea salt
- Make the dressing. Combine all ingredients and blend for a few seconds.
- In a large bowl, combine greens, vegetables, fruits and herbs. Add the dressing and toss. Serve.
