This roasted chickpeas with okra and root vegetables dish is truly delicious. It really makes a great summer dish. It’s made with organic chickpeas, fresh okra, beets and carrots, and I’ve added some red onions, fresh parsley, extra-virgin olive oil, lemon juice, sea salt and freshly ground black pepper. It’s vegan and gluten-free.
Do you know what is okra? Or have you ever had okra? Okra is a southern US plant that produces green seed pods. The pods are a great source of vitamins and minerals, as well as dietary fiber. It’s a very popular vegetable used in tropical countries. Okra can be used in soups, salads, or can even be preserved. Okra pickles sounds so good. It was the first time I was eating okra and I was so excited about trying that new vegetable. I’m Canadian and even though I traveled a lot and lived in the US for 2 years already, it was the first time I was really trying it.
I also used fresh beets and carrots, that I simply chopped. I personally prefer to leave the skin on it as the skin contains a lot of nutrients. For the chickpeas, I simply used organic canned chickpeas, but you could easily cook and use your own if you prefer.
This dish tastes great but it’s also so easy to make.. Seriously. You simply put all the ingredients into a glass baking dish and you roast at 400F for about 40 minutes. When it’s ready, it will smell lovely in your house. The fresh parsley and lemon juice really bring a nice touch. And I don’t know if you agree with me, but it really looks good when it gets out of the oven.
- 2 red beets, diced
- 2 carrots, sliced
- 6 okra, chopped
- 1 small red onion, cut into quarters
- 1 can organic chickpeas, rinsed and drained
- Handful fresh parsley, chopped
- One lemon, juice
- Extra-virgin olive oil
- Sea salt
- Black pepper
- Preheat oven to 400F.
- Place all ingredients in a baking dish, including the chickpeas and herbs.
- Drizzle with olive oil, splash with lemon juice, add fresh parsley and season with sea salt and freshly ground pepper.
- Bake for about 40 minutes.
- Plate and serve.
