Spiced Cauliflower with Peanut Sauce

I bought a big cauliflower because it was so fresh and perfect but I didn’t know exactly what to do with it. And since I LOVE roasted cauliflower, I thought about mixing spices with it and make a delicious, creamy peanut sauce to serve with the cauliflower bites. I don’t eat peanut butter but I love peanut sauces! The sauce is made with organic peanut butter (you want to avoid peanut butter that has added sugar, soybean oil or preservatives), coconut milk, lime juice and chili pepper. Oh my.. It was so good.

Spices are very healthy, if you can tolerate them. I know for myself that there are a few spices that seem to upset my stomach. I’m still in the process of trying to discover which foods don’t make me feel so good. We have to remember that it doesn’t mean a food is good for someone and known as healthy that is good for us. However, generally speaking, spices are very healthy. They are a great way to enhance flavors without adding too much salt.

These cauliflower bites are so easy to make and so healthy. I covered them with extra-virgin olive oil but next time, I’ll use melted coconut oil, which is so nutritious. If you try with coconut oil, let me know how you liked it! The cauliflower bites aren’t too spicy so if you want them spicier, feel free to add more chili pepper or if you prefer, add a pinch of cayenne pepper. And same for the sauce.

They make a great appetizer, side dish or snack. Peanut butter is a great source of vegan proteins and proteins are best eaten with vegetables for proper digestion. These cauliflower bites are vegan, gluten and soy-free. For a paleo or peanut-free version, replace peanut butter with almond butter.

They take about 40 min to cook and with the leftovers (if you have some), you can make a big kale salad, like I did. I used the leftovers (cauliflower & peanut sauce) and made a delicious kale salad. It was really good! I think it’s a recipe that is worth to try it!

Spiced Cauliflower with Peanut Sauce
 
These delicious spiced cauliflower bites are easy to make and very healthy. They are vegan, gluten and soy-free. For a paleo or peanut-free version, replace peanut butter with almond butter.
Ingredients
  • 1 large cauliflower, cut into florets
  • ¼ cup extra-virgin olive oil (or melted coconut oil)
  • 2 tsp cumin
  • 1 tsp coriander
  • ½ tsp fine sea salt
  • ¼ tsp turmeric
  • ¼ tsp garlic
  • ¼ tsp ground chili pepper
  • ⅛ tsp cardamom
  • ⅛ tsp ginger
  • Sauce:
  • ¼ cup full fat coconut milk
  • 2 tbsp organic peanut butter
  • ½ lime, juice
  • ¼ tsp ground chili pepper
  • ¼ tsp fine sea salt
  • ⅛ tsp ginger
Instructions
  1. Preheat oven to 400F and line a baking sheet with parchment paper.
  2. Mix spices in a small bowl.
  3. In a large bowl, combine cauliflower florets and spices. Mix with your clean hands to spread the spices.
  4. Add olive or coconut oil, making sure the oil goes everywhere.
  5. Spread cauliflower on the prepared pan.
  6. Roast for about 40-45 minutes or until lightly golden/brown.
  7. While the cauliflower are in the oven, prepare the sauce: combine everything in a blender and blend until nice and smooth.
  8. Enjoy the delicious cauliflower bites with the creamy peanut butter sauce.
Notes
If you have leftovers (sauce and/or cauliflower), you can make a delicious salad, like the chopped kale salad you see above. I've added chopped olives, avocado and cilantro, and it was truly delicious.
