This watercress salad is delicious! Watercress is an aquatic plant that is an excellent source of vitamin A, C and K. Avocado are fruits that are alkaline-forming and very nutritious. They provide healthy fats that help to nourish all the cells of our body. Avocado do NOT contain any cholesterol, as cholesterol is only found in animal food. Broccolini is similar to broccoli but has smaller florets, and longer and thiner stalks. I prefer to eat my broccoli and broccolini lightly cooked as it’s easier to digest, so I steamed it and let it cool down before adding it to the salad. You don’t have to steam or boil it if you don’t want to but I think it makes it a little more enjoyable to eat. Steaming is better than boiling as you preserve more nutrients. Avoid over steaming or over boiling.
I made a creamy tahini ginger sauce for this salad. Tahini is a paste made from ground, hulked sesame seeds. Sesame seeds a good source of calcium and iron. I’ve also added fresh ginger. You will need a small blender such as a Magic Bullet to make the dressing. If you don’t have one, you will have to grate the ginger very fine or omit it. I love tahini dressings, they are so creamy and healthy!
- One bunch of watercress, chopped
- ½ cup micro greens
- 1 broccolini, steamed
- 1 avocado, diced
- Raw crackers, or your favorite crackers
- 2 Tbsp tahini
- 1 orange, juice
- 2 Tbsp lemon juice
- ½ " ginger, finely chopped
- ¼ tsp sea salt
- Make the dressing: Blend all ingredients together until smooth.
- Make the salad: Combine all ingredients together but steam (or boil) the broccolini first.
- Pour some of the dressing on the salad, toss if you want, and enjoy.
