Have you ever had hummus but made with zucchini instead of chickpeas? I have to admit that it doesn’t taste EXACTLY like hummus, but it’s really healthy and delicious. It’s also much lighter. I love to make zucchini hummus but this one is a little different as I added avocado to it. By adding an avocado, it makes the hummus even creamier and we don’t need to add any oil. So if you have extra zucchini from your garden, think about making a batch of zucchini hummus!:)
Hummus makes a really great snack. Serve it with crudités or raw crackers if you like, and you have a delicious healthy snack. It’s also great to serve for children after school. To make the hummus, all you need to do is combine all ingredients into your food processor and process until smooth. I garnished with sliced shallots and smoked paprika, which was really delicious. This hummus is not spicy but feel free to add a touch of heat if you like. This zucchini avocado hummus is raw, vegan, paleo, and oil-free.
- 1 medium zucchini
- 1 avocado
- ¼ cup tahini
- 1 lemon, juice
- 1 small clove garlic
- 1½ tsp cumin
- 1 tsp sea salt
- Sliced shallots, to garnish
- Smoked paprika (or regular paprika), to garnish
- Combine all ingredients into a food processor and process until smooth.
- Transfer to a bowl and garnish with sliced shallots and paprika.
- Serve with crudités and/or healthy crackers.
