This zucchini hummus tastes much better than how it looks (sorry for not having a beautiful picture; I quickly made it and served it to my toddler than realized I should have taken a picture haha!) Oh well! You get the idea of how it looks though.
This hummus is healthy and paleo friendly as it doesn’t use chickpeas but zucchini. Make sure to peel the zucchini if you don’t want your hummus to be green haha! It’s also vegan and gluten-free.
It’s easy and quick to make, and is great with crudités, pita bread or to use in sandwiches, on top of salads or as a side dish . It’s nutritious too and a great way to eat tahini. Tahini is a good source of protein and calcium.

- 1 medium zucchini, peeled and chopped
- 2 tbsp tahini
- 1 tbsp lemon juice
- ½ tsp unrefined salt
- ¼ tsp cumin
- pinch cayenne
- Put all ingredients in a small blender or food processor and blend until smooth. Scrape down sides with spatula if needed.
- Sprinkle with paprika if you like. If serving for adults, you can also top with fresh parsley.
