Carrot cake overnight oats anyone? Yes, please! This recipe is bursting in flavours and textures. It’s so delicious, well, if you enjoy the type of ingredients you find in carrot cake.

Talking of cake, what’s your favorite kind?! I love carrot cake, personally, BUT, I also love chocolate, lemon poppy seed, mmm… All kind of cake but just not often, haha! And the kind of cake depends on my mood actually, oh and the season.. For example, during winter, I will favour a chocolate cake; during spring, I will choose a carrot cake and summer something lighter or made with fruits like a lemon poppyseed or fruit cake with whipped cream maybe, while in fall I will prefer something made with apple, pear or pumpkin pie spice kinda cake. Other favorites are tiramisu and omg the prettiest cake of all with the best name ever: The Swedish PRINCESS cake !!! Have you been to Sweden? I went last year and tried that cake in the best bakery and holy moly that was amazing and so pretty! I ate the entire piece, like no guilt. It’s a princess cake, haha! Ok, enough taking about cakes. Let’s go back to the healthier, breakfast recipe, haha!

What’s Inside the Carrot Cake Overnight Oats?

Only healthy ingredients – rolled oats, chia seeds, almond milk, freshly grated carrots, coconut, raisins, walnuts, maple syrup and warming spices like cinnamon, ginger and nutmeg. YUM.

How Do I Make It?

Easy – Mix all the ingredients together in a bowl. Then, cover and refrigerate overnight, allowing the oats and chia to absorb the nondairy milk. In the morning, take it out, pour into a new bowl if you like (otherwise your bowl will be cold – but if you don’t mind eat it straight from the bowl) and enjoy. A cup of organic coffee, chai tea or London fog would be just amazing with that. So yummy. I just had breakfast as I’m typing this and I’m excited for my next breakfast tomorrow LOL ! Anybody can relate? Probably not, haha!

Dietary Restrictions

The recipe is vegan, gluten- and soy-free. If you are gluten-free for medical purposes, make sure to buy rolled oats that are labeled as gluten-free. Oats are naturally gluten-free but because of cross contamination they may contain traces of gluten.

Carrot Cake Overnight Oats

This carrot cake overnight oat recipe is truly delicious. Oats and chia are combined with freshly grated carrots, walnuts, raisins and warming spices.

  • 1 cup rolled oats
  • 1 cup coconut or almond milk
  • 1 cup freshly grated carrots
  • ¼ cup chopped walnuts
  • ¼ cup raisins
  • 2 tablespoons pure maple syrup
  • 1 tablespoon chia seeds
  • ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • 1/8 teaspoon nutmeg
  • ½ cup water, if needed


  • Combine all ingredients together in a bowl and mix to combine. Cover and refrigerate overnight.
  • In the morning, give it a stir and enjoy.


When serving, you can add more coconut, raisin or cinnamon if you like.
