This coconut chia yogurt pudding is rich, thick and so easy to make. It makes an excellent breakfast, or snack. It’s very nutritious without mentioning versatile. You can really put the fruits you like and any other toppings of your choice, if you feel like it. It’s definitely a recipe you want to try for your family, especially during busy weekdays as it can be done the night before.
How to Make Chia Yogurt?
Easy. For one portion, mix 2 tablespoons of whole chia seeds with 1/2 cup of your favorite healthy yogurt, cover and refrigerate overnight. In the morning, add berries or any other things you would like on it and enjoy. Note: Yummy with a hot cup of green tea.
Are chia seeds healthy?
Very. They are a very nutritious seed. Chia is a complete source of protein, an excellent source of fibre and essential fatty acids, as well as a variety of vitamins and minerals. They are easy to digest and absorb, and can be consumed daily.

What kind of yogurt should I use?
It depends. In this recipe, I used a nondairy coconut berry yogurt but you could use any yogurt you like. I recommend using an organic yogurt. You can do cow’s milk yogurt if you like or a non-dairy yogurt. You can do plain or flavoured but watch out for sugar content; choose one that it isn’t too high in sugar. Again, I recommend getting an organic brand for a more natural, healthier yogurt. And if you want more protein, get a Greek yogurt.

What can I use for topping?
Besides berries (or seasonal fresh fruits), you can do any nuts and seeds (think almonds, walnuts, hemp, sunflower,..), or superfoods like goji berries, raw cacao nibs, coconut flakes or even bee pollen.

Ingredients
- 2 tablespoons chia seeds
- 1/2 cup organic coconut berry yogurt (or your favorite non-dairy yogurt, or Greek or whole yogurt)
- Fresh berries, for garnish
- Other toppings like goji berries, raw cacao nibs, coconut flakes or even bee pollen, for garnish (optional)
