Coconut Mango Popsicles

These coconut mango popsicles are refreshing, tasty, and perfect for a healthy summer treat. They’re also a fun activity to do in the kitchen with your little ones. They are easy to make. The only downside is waiting for them to freeze to enjoy them:)

Filling

The popsicles are dairy-free. They are made with full-fat canned coconut milk. The milk is blended with mangoes, sweetener and pink salt. It’s truly delicious. I really like how they don’t contain any dairy. It’s truly a guilt-free treat. I used local honey as I find it pairs beautifully with mangoes and I love the health properties of honey but if you are vegan, feel free to use coconut nectar or pure maple syrup.

Popsicle molds

There are many kinds of popsicle molds out there. Just use what you have or find something in your local cooking store or even online on website like amazon.com. Zoku is a great brand if you can find it. You can get regular popsicle shapes or fun shapes which can be fun for kids. There are so many. So obviously the size of your popsicle molds will affect the quantity of popsicles you will get.

Yogurt

Once you fill the molds with the coconut mango filling, leave some space at the top. That space will be filled with coconut yogurt so you end up with somehow two layers of yumminess. If you really want to make them perfect, fill the first part first to get perfect layers or if you’re always in the rush like me, just slowly add the yogurt with a spoon and freeze everything at once. The brand SoDelicious has great, affordable coconut yogurt. Cocoyo is even better and is my favorite but is not easy to find and I prefer to eat that incredible yogurt on its own.

Coconut Mango Popsicles

These healthy popsicles are made with coconut milk, mango, local honey and coconut yogurt. They are delicious and easy to make. If vegan, replace honey with coconut nectar or maple syrup.
Prep Time10 minutes

Ingredients

  • 1 can full-fat coconut milk
  • 2 cups diced mangoes, fresh or frozen
  • 2 tablespoons local honey, coconut nectar or maple syrup
  • Pinch pink salt
  • Coconut yogurt, plain or vanilla

Instructions

  • In a high-speed blender, blend coconut milk, mango, honey and salt until smooth.
  • Divide between popsicle molds, leaving some space at the top to add coconut yogurt.
  • Slowly add coconut yogurt to fill the space with a spoon. If you want a perfect layer, freeze the first part before adding the yogurt. Otherwise, just slowly add it.
  • Add the stick to each popsicle and freeze until set.

Notes

The amount of popsicles will depend on the size of your popsicle molds.
