Creamy Cauliflower Soup

This Creamy Cauliflower Soup is super creamy without the cream. I use cashews to make it smooth and creamy while increasing nutritional content. The soup is super easy to make yet super delicious. Makes a perfect weeknight meal.

Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 large cauliflower (cut into florets)
  • 1 cup raw cashews
  • 1 tsp unrefined salt
  • 1/4 tsp white pepper (black is fine if you dont have white)
  • 4 cups water
  • 1/2 lemon, juiced

Instructions

  • Heat oil in a large pot over medium heat.
  • Add onions and garlic and cook for 2-3 minutes.
  • Add cauliflower and cashew, salt and pepper, and cover with water.
  • Bring to a boil, reduce heat to low, cover and simmer until cauliflower is cooked through, about 15 minutes.
  • Turn off heat, add lemon juice.
  • Allow to cool slightly and blend until smooth.
