Honey Dijon Chicken with Vegetables

This one pot honey dijon chicken dish is absolutely delicious and pretty easy to make. Your family will love this. It’s not too sweet and not spicy either. The honey balances the Dijon mustard beautifully.

This dish is all made in one pot for easiness and convenience. It’s a great weeknight meal, especially during Fall or Winter. It’s nourishing and it’s a complete meal with the potatoes and the green beans. If you dislike green beans, you can switch for broccoli, or serve the chicken and potatoes with a salad, if you prefer.

I used organic chicken breasts, organic local potatoes and green beans. I like to use local ingredients and organic whenever possible.

The dish is gluten-, dairy- and soy-free.

Honey Dijon Chicken with Vegetables

Ingredients

  • 3 tbsp olive oil divided
  • 1 lb potatoes cut in half or quartered
  • 1 medium red onion quartered
  • 1/2 lb green beans washed and trimmed
  • 2-4 chicken breasts skinless, boneless
  • Unrefined salt to taste
  • Ground black pepper to taste

Sauce

  • 1/4 cup Dijon mustard
  • 1/4 cup local honey
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp garlic powder
  • 1/4 tsp unrefined salt
  • Pinch ground black pepper

Instructions

  • Preheat oven to 400F.
  • Place cut potatoes and onions in a large baking dish. Drizzle with 1 tbsp of olive oil and season with ¼ tsp of salt. Stir and roast for 30 minutes. 
  • Meanwhile, season chicken breasts with salt and pepper. Heat 2 tbsp of olive oil in a large skillet over medium-high heat and add chicken breasts. Sear on both side for about 3 minutes on each side. Remove from heat. Set aside. 
  • When potatoes are ready, take the dish out of the oven and add in chicken breasts and green beans. Return to the oven for 15 minutes. 
  • Meanwhile, make sauce by combining and mixing all ingredients together in a bowl.
  • When chicken is done, after 15 minutes, pour all the sauce over the chicken, stir and return to the oven for another 15 minutes.
  • Remove dish from oven, plate and serve.
