Carrot Cake Overnight Oats

This carrot cake overnight oat recipe is truly delicious. Oats and chia are combined with freshly grated carrots, walnuts, raisins and warming spices.

Ingredients

  • 1 cup rolled oats
  • 1 cup coconut or almond milk
  • 1 cup freshly grated carrots
  • ¼ cup chopped walnuts
  • ¼ cup raisins
  • 2 tablespoons pure maple syrup
  • 1 tablespoon chia seeds
  • ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • 1/8 teaspoon nutmeg
  • ½ cup water, if needed

Instructions

  • Combine all ingredients together in a bowl and mix to combine. Cover and refrigerate overnight.
  • In the morning, give it a stir and enjoy.

Notes

When serving, you can add more coconut, raisin or cinnamon if you like.
