Apple Cinnamon Baked Oatmeal

This gluten- and dairy-free baked oatmeal is nutritious and flavorful. It's made with organic apples and sweetened with pure maple syrup.

  • 3 cups rolled oats
  • 1/4 cup coconut sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon unrefined salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1 pastured egg
  • 1 1/3 cup almond milk
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 organic apples, small dice


  • Preheat oven to 350F and grease a baking dish with coconut oil. Set aside.
  • In a large bowl, combine oats, coconut sugar, cinnamon, baking powder, salt, nutmeg and ginger, and stir to combine.
  • In a medium bowl, whisk egg. Then whisk in milk, maple syrup, coconut oil and vanilla.
  • Add wet to dry and mix to combine.
  • Fold in apples.
  • Transfer batter to prepared pan.
  • Bake for 35 to 40 minutes.
  • Allow to cool down slightly before slicing. Serve with maple syrup.


If you don't have maple syrup, you can use local honey.
