Apple Cinnamon Baked Oatmeal
This gluten- and dairy-free baked oatmeal is nutritious and flavorful. It's made with organic apples and sweetened with pure maple syrup.
3 cups rolled oats
1/4 cup coconut sugar
2 teaspoons cinnamon
1 teaspoon baking powder
1/2 teaspoon unrefined salt
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1 pastured egg
1 1/3 cup almond milk
1/3 cup maple syrup
1/4 cup melted coconut oil
1 teaspoon vanilla extract
2 organic apples, small dice
Preheat oven to 350F and grease a baking dish with coconut oil. Set aside.
In a large bowl, combine oats, coconut sugar, cinnamon, baking powder, salt, nutmeg and ginger, and stir to combine.
In a medium bowl, whisk egg. Then whisk in milk, maple syrup, coconut oil and vanilla.
Add wet to dry and mix to combine.
Fold in apples.
Transfer batter to prepared pan.
Bake for 35 to 40 minutes.
Allow to cool down slightly before slicing. Serve with maple syrup.
If you don't have maple syrup, you can use local honey.
