Healthy Double Chocolate Muffins

These healthy double chocolate muffins are made with mashed bananas, coconut oil, pure maple syurp and spelt flour. They are vegan and nut-free.

Ingredients

  • 2 tablespoons ground flax seeds (or ground chia seeds)
  • 5 tablespoons water
  • 1 cup mashed bananas
  • 1/2 cup almond milk (or nondairy milk)
  • 1/3 cup pure maple syrup
  • 1/3 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup spelt flour
  • 1/2 cup raw cacao powder
  • 1/2 cup mini dark vegan chocolate chips
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon unrefined salt

Instructions

  • Preheat oven to 350F.
  • Line a 12 muffin pan with silicone or paper cups.
  • Mix flax with chia in a small bowl and set aside.
  • Mash banana in a bowl then add in almond milk, maple syrup, coconut oil and vanilla.
  • In a separate bowl, combine spelt flour, raw cacao powder, chocolate chips, baking soda, baking powder and salt and stir to combine.
  • Add flax to wet mixture, stir and add wet mixture to dry. Stir to combine.
  • Divide batter evenly between muffin cups.
  • Bake for 30 minutes.
